Hi guys hope all is well . I have an Olive Garden that we have been cleaning for a while . When we first got it it had what i figured was caked on grease , mop water or food all over . This stuff is like tar and thick . Tried everything on it and not much luck. They restaurant replaced the carpet about 4 months ago and had us on a 3 week cleaning schedule. We have not had the issue anymore and have been keeping the carpet in good shape. This last scheduled cleaning was delayed by the restaurant for 5 weeks last night the tar , grease whatever came back . We got it out but I am wondering what is this stuff and what can they do to help prevent it.

Are they doing a good job keeping the kitchen floor clean?

I suspect the kitchen floor is always greasy. Even after they clean it.

It's just food and oils. Walk off mats help but they have to be cleaned also. You need a strong synthetic enzyme prespray, scrub with a 175 or crb, then rinse with the hottest water available.

It's food.
Yes sir it looks like food but this stuff gets hard like tar . We got this out but the stuff they had before was rock solid . I was hoping to figure out if it was something else other than your typical stuff.
